How to setup Ultra2 with iPhone X?

I have recently purchased an Ultra 2 and new iPhone15Pro.

The phone is back ordered, and now I’m finding out that my watch will not pair to my iPhone X because it is not allowed to update to iOS17. WTF?

is there a way to use my watch for the next month while I wait on my new phone or do I just have a paperweight for now?

Update Watch 3 issue I just upgraded from iPhone 12 to iPhone 14 pro. I have an Apple Watch 3 when I tried to pair to new phone, I had to unpair from phone then repair, when I do this, I follow the steps but when I get to the upgrade (won't pair until I upgrade watch) it downloads update but gets stuck on preparing. I don't want to purchase another watch. Looking for suggestions on how to pair successfully.
