Looking at the Technical Specifications for the iPhone 14 Pro (which originally shipped with iOS 16.0), I see
Syncing to a Mac or PC requires:
* macOS Catalina 10.15 or later using the Finder
* macOS El Capitan 10.11.6 through macOS Mojave 10.14.6 using iTunes 12.8 or later
* Windows 7 or later using iTunes 12.10.10 or later (free download from itunes.com/download)
Now suppose these requirements really have more to do with the iOS version than the iPhone model. That would suggest that a Mac running High Sierra can manage even one of the latest iPhones, running iOS 17 … although it would need a just-released update to iTunes (iTunes 12.9) to do so.
As far as Macs running Sierra and the latest version of El Capitan are concerned, it sounds like they can manage iPhones running anything up to iOS 16, but that they cannot manage iPhones running iOS 17.
The OP did not tell us which Mac he has, or what version of macOS he is running now, but from this information, maybe he can figure out which boat he is in.
