I am trying to recover an edited note (edited by mistake). I have tried downloading an older icloud backup.. however for some reason the notes downloaded are the ones that are up to date. (I believe this is because they are synced to the latest notes). Does anyone have an idea on how I can get around this issue and retrieve the note prior to it’s edit?

Obtaining an Older Version of iCloud:
You wouldn't be able to download an older version of iCloud.
Only Other Option:
Restore your Mac: Disable Notes in iCloud Settings, and then restore your Mac from a backup of it that has the draft of this Note with this info. Once restored, export your Notes. Create backup prior to the restoration, and then restore to this backup, after the not is restored. Then, import the note, overriding this Note. Getting Notes Info Back to a Previous Draft:
If the draft of these notes are on another device, then power of your router so that it does not connect to the internet. Then, open the device, and then get the info off of that.

Search Through a Download of iCloud:
One option would be to export all of iCloud onto an external disk, and then search for the files on the Hard Drive in a new Finder window. Read my User Tip for more: Getting a Quick and Direct "iCloud Drive-to-External Hard Drive" Download - User Tip

Not that I am aware of. But, even if you could, it will be nothing of an older iCloud version.
