Apple Card is a MasterCard and accepted by merchants worldwide that accept MasterCard.

Nothing special to do and the servicing bank, Goldman Sachs, does not need to be notified of your travel plans. The card has no foreign transaction fees, but exchange rate to dollars will still be added. You can get around the exchange rate fees by asking the merchant to charge you in dollars.

Apple Card is tightly integrated into iPhone and if a transaction does trigger an alert, you immediately get a text message asking if you just attempted that transaction. Answer, Yes, and the transaction will go through when you put the charge through again.

Safe travels.
