Using Finder with MacOs 13.6 and now with MacOs 14.0, the backup with iOs is very slow while it’s very fast with PadOs 17. I don’t understand why, but the issue is only with iOs. And the ips files (iOs, not PadOs) remains on the phone, they are not copied on the Mac.

IPS file refers to an analytics data file generated by iOS devices.
If it where me I would simply try again after a few point updates roll out to sort issues as they present themselves.
The current stable release of iOS including bug fixes, security updates is iOS 17.0.2
