I would start by changing ALL of your passwords.

The problem is they may have copied information off your phone before you removed anydesk. Did you choose to Allow anydesk to access content on your phone?

One of the many steps you should take that comes to mind is Settings > Safari > Clear History and Website Data.

If you think your Apple ID has been compromised - Apple Support

If you have a backup made before this incident that would be a good idea, but they could have gotten private data before you deleted the app. Doing a factory reset will not remove any data that they had already downloaded.
