how to add an email subject line to a mailto: link

I would like to add a link to an email which opens a new email and has the subject line pre-filled out

When you right (or two-finger) click on an email address in the body of an email, the only option for copying the email address is 'Copy Link'. Doing so includes 'mailto:' at the start of the email address. I always have to manually delete this after pasting. There should be a 'Copy Email Address' option. Yes, you can select the text and then copy but you should have to do this. It should be in the right click menu. This drives me mad.

Composing email to new recipient I cannot seem to type a new email address in the send mode without Mail defaulting to an existing email it finds. I have typed the entire email address but immediate it flips to one of the suggested ones that pop up menu. I have attempted to type the entire address but that is no solution. It has never done this before so I am wondering if there is a setting that somehow changed.
