I just updated my iPhone 12 mini to iOS 17. I was then forced to update my Apple Watch Series 7 to WatchOS 10.
My son is still using an Apple Watch Series 2. If he updates his phone to iOS 17, will he no longer be able to use that watch as its last compatible OS was WatchOS 6.3?

I strongly believe you were being told an update was available, and perhaps there was an implied suggestion that you update your Apple Watch.
If I were in your situation, I would unhesitatingly update my son’s iPhone to iOS 17.
“Had to”? Perhaps you were being advised that an update was available?
Consider the exact wording you were shown.
Nope. Though I don't recall the exact wording, there was no way past the message I received.

If that were true, then either you would see the message again and be blocked when you tried again and could report its wording, or you would be able to proceed past the message.
I went ahead with the update on my Watch, so it is already updated. Hence, there is no way to see the wording again there. On my son's devices, I don't want to update his phone in case he gets a similar message, as he wouldn't be able to complete the update on his older watch.

When I went to use my Watch app on my iPhone, it said I had to update the watchOS.
