So I utilize the copy text from images feature so that I can get Time Codes from my FCPX Projects. Prior to the Sonoma update it worked perfectly.
I would screenshot my Tags from FCPX and then paste them into a notes document to organize them into a more aesthetic format, as shown below.
Post Sonoma Update it Pastes into a Table as shown below.
Is there anyway to turn this feature off?

The table is being created as you copy text from an image rather than being a Notes issue - I just copied your image above and pasted in to Word and it too created a table.
I have a suspicion that the feint colour differences between each row is being detected as a table (probably a new 'enhancement' to Live Text)
The only thing I can think of is to change TextEdit's settings to use Plain Text and paste it there first, then copy and paste from there in to Notes. Doing that will strip any formatting

Thank you, after reading the Linked page I found the answer at the bottom. Luckily all you need to do is click somewhere inside of your table then click the table icon at the top of the notes app after that a convert to text button will appear and that does exactly what I needed!

Or something might have changed in FCPX where it now has table cells not visible. If you copy anything that was within a table cell it adds tables to notes.
