I am trying to pair my Series 6 watch to my 15 pro max. It wont recognize it. I restarted both. I checked wifi and bluetooth. The watch doesnt even come up in the My Watch app as an option. I cant pair it as an existing watch or a new watch.

Seems the operating systems installed on the Watch and iPhone may not both be updated to the latest versions:
The iPhone 15 pro max needs to have iOS 17 or higher installed: About iOS 17 Updates - Apple Support
and
The Watch series 6 may need upgrading to WatchOS 10 or higher: Update your Apple Watch - Apple Support
If both the OS versions are already up-to-date:
