I'd like to trade in two iPhone SE 3rd generation for a new iPhone 15 pro. Can I get credit for both?

I think he’s saying that you must trade in at least one of the phones for an Apple gift card before you order the new phone. Whether that trade-in is in person or by mail.
When you order the new phone, then presumably you could use the gift card amount (if any) from the completed trade-in as part of the payment.
It would be easier if you did it in store. Otherwise you would need to trade in one of the devices before ordering, get your credit which wouldn’t happen until they receive the device and inspect it) and then would likely need to call Apple to complete your purchase with the other trade in device plus using the store credit you received for the other trade in. You can not do this online. Or you would have to trade both in for credit before ordering…waiting to receive the credit first. So in store would be the easiest method without needing to wait other than wait for the phone you’re choosing to be available if the don’t have it in stock
You can get a credit for the trade ins and then use that credit to purchase your iPhone but you can’t do that with an online order. Only one device can be applied for trade in that way.
