Can’t ping my phone or find my flashlight on my I watch! Why?
Me too! This is something I use almost every morning in order to not disturb my wife!
watchOS 10 is the latest software release for the Apple Watch. If you can't find the Control Center on the Watch to access the "Flashlight icon," please refer to Use Control Center on Apple Watch.
Open or close Control Center
It just moved to the flat oval side button (see picture)

DO NOT hold the button, as that brings up Emergency Services display
Settings -> Accessibility -> Side Button Click Speed
can be used to adjust how fast you need to do the press and release. This can be very helpful when using Apple Pay and you have to do that double press and release. Slow works for me. Slowest works for my Wife.

Follow the instructions provided by Ferd II just above your post. The control center is still there, it just moved to the side button

If this is watchOS 10, tap the side button (the side button, not the digital crown knob) to open control center, and select and tap on the flashlight icon from control center.
flash light and other things like to ping my iphone and the hawki talki and to mute the watch …etc are missing since the last update ….

Press the side button to access the control center; the side button, not the digital crown knob.

Can adjust the press and release timing so you can reliably get the Control Center displayed with the flashlight icon. This option is also useful getting the Apple Pay double press and release timing to work reliably for you. I like the Slow setting, while my Wife likes Slowest.

Adjusting The "Side Button Click Speed" is also useful for Apple Pay’s double press and release. There is “Default” (sub second timing of needed), “Slow” (up to a second between press and release), and “Slowest” (up to 2 seconds between press and release). I like the “Slow” setting. NOTE: Slow and Slowest settings do not mean you have to wait a full second or 2 seconds between press and release. It just means you do not need to be super fast.

Title of this thread aside, watchOS 10 is the latest version available.
iPhone X and earlier including iPhone 6 Plus and earlier are not supported with iOS 17, and are not supported with watchOS 10.
watchOS 10 requires Series 4 or newer, and requires iPhone XS, XR, SE 2nd, or newer.

Which iPhone, and which iOS? (Settings > General > About)
Which watchOS version? (On iPhone, launch Watch app > select your watch > General > About)
