I set my call controls to end call with one click, but it always keep changing to double click. I just use them, and after some time, the setting is changed to double click, without me intervening.

YES!!! And it's maddening.
I also use 1 click to end a call but my Airpods 3 (A2564) keep switching to 1 click for Mute & Unmute, and 2 clicks to end a call.
This has only been happening since the last firmware update, 6A300, for me. I don't think there was a Mute & Unmute option before.
It doesn't happen every time I connect my Airpods, but it happens a couple of time a day.
When it does happen there's usually a popup window telling me about the new feature (Mute & Unmute) with a link to the settings.
It's like Apple reeeeealy wants you to use this new feature and the default setting is 1 click.
PLEASE FIX THIS, APPLE.
I've been dealing with this issue as well, the popping sound the airpod makes is really unpleasant to me as well, making two in a row is too much. Really frustrating to need to change this setting back at least once a day, I wish the click to mute popup would at least link to the settings page. instead of having to navigate through menus.
I have the same issue. I even got replacement Airpods 3 from Apple, but I still experience the same.
I have reinstalled my iPhone 14 and its updated with the newest IOS (17.2.1) and the Airpods has firmware 6A321, but this doesn't fix the issue.
Apple still doesn't understand what I'm talking about!
Same thing happened to me, I visited Apple Store in London, I tried to explain for them what is happening, they didn’t understand the problem at all

My guess is that this is a firmware issue. Apple just released a firmware update today.
