iPhone backups missing when I uninstalled iTunes from Microsoft Store

I was trying to restore my iPhone 12 Pro on a version of iTunes that was downloaded from the Microsoft Store, however, every time I tried clicking on the restore button, nothing happens. I tried unplugging/plugging the phone from/to the PC, restarting iTunes, restarting my PC but none of that worked so I thought I'd uninstall this version of iTunes and try installing iTunes directly from Apple's site. This time round, I was able to proceed with the restore. To my horror, when the whole process was complete, iTunes wasn't able to detect any backup files on my PC. I've made multiple backups in the past and even made one right before I started trying to restore my phone on the previous "Microsoft Store" version of iTunes. I've already checked in C:\Users\USERNAME\AppData\Roaming\Apple Computer\MobileSync\Backup and there's nothing in there.


Are my backup files lost for good? Or could they possibly be elsewhere? (Like in another folder that the Microsoft Store iTunes uses).


Kicking myself in the foot right now for not making another backup right before I did the restore on the re-installed iTunes.
