For your third party app look for an official un-installer(?)

OneDrive is just an app and does not "take over" your Mac unless you allow it to.
What files exactly and where are you looking for them?
OneDrive came with my MS Office suites, and as I don't care for it, they're just sitting there doing nothing. On my 2016 MBP, I uninstalled it using the app AppCleaner ... completely gone, no harm; no foul.
I’m not techie enough know what I did wrong. I had transferred all my documents from word and excel from one laptop to another. Everything was there. Then, received a message from MS to start using OneDrive. I thought it would be extra protection, so I did but every time I try to open my documents I had to go through steps with one drive. So I googled how to get rid of it, went by their instructions and afterwards all files on my desktop and documents folders were gone. The only thing left was my photos.
My guess is in your confused state you deleted the wrong set of files. Not the ones on OneDrive but, in fact, the local files that are the source of what you see in OneDrive. That, of course, removes the remote files, but it does so because the local files are gone.
Assuming that's correct, and you apparently can't confirm that, your only recourse is to restore your missing data from your backups.
Have you checked your Trash to see if they're there? If so, you can open the Trash and choose "Put Back" to well, put them back. But that's possible only if they happen to still be in the Trash.
Have you used Spotlight to search your drive for them? You don't need to know the file name, you can search on an extension: .doc, .xls, .txt and so forth. Or a partial file name if you remember any.
