An eSIM is not a card, it is software. A SIM card is hardware, a small card that fits into a slot on the side of the phone.
If you have an eSIM, delete it.
If you have a SIM card, physically remove it.

Is everything transferred to your new phone and the new phone is working? if so, delete the eSIM on the old phone.
Do you mean remove it? I’m sending in 2 iPhone 11s for trade in. The phones data is removed but the eSIM cards are still intact. I feel like I need to remove them. Is that correct?

Delete = remove
Actually it asks so,
like if you select keep it, and trade it with a new iphone while backing up from old iphone your esim will activate asap on the new iPhone without any issue which means you no longer need a new esim again or a new physical sim
Delete the esim
