I should be able to take a picture of the bar code or enter the number manually so I can have my key tag in my wallet.

Physical pass scanning isn’t currently supported by Apple Wallet! You can use a 3rd party app, or see if your gym/chiropractor supplies online passes on their site, those you can add to your Apple Wallet! You can also check out all supported cards here: Wallet - Apple

Not all items like that can be added to the wallet. If you look at the following link you’ll see foot notes for each type of thing that you can add that points out that only certain companies/cards/etc can be added.
Why can’t I add my pass to enter the gym or to my chiropractor to my wallet. It is a barcode to hang on a key ring. Only I don’t carry keys any more.
