To work at apple..is Ai something that is being developed?
Siri Ai? I am curious if machine learning is being used in some way? what type of experience would I need to get hired to work on this training model?

Use of ML is widely used—if not ubiquitous—across Apple products.

ML APIs and tooling and hardware is available to third-party apps.

As commonly used, "AI" is a longstanding and over-hyped concept in computing, dating back to the ~1980s, and which can loosely be translated as Advertisements and Investments. Best mind your wallet, here.
ML is a black box of statistical algorithms and matrix math that can scan corpora to produce outcomes ranging from useful to convenient to catastrophically wrong. When appropriately housebroken and carefully constrained, ML works well.

Mr Hoffman did not say it, but Apple prefers the more accurate term "Machine Learning" . In fact all Apple Silicon has what they call a "Neural Engine" to enable it in hardware.
As Stan Kelly-Bootle said in 1981 in "The Devil's DP Dictionary":
Artificial Intelligence is something studied by the Artificial Intelligentsia. And it is a misguided search for a lower cost Homo Sapiens, when many of them are under-utilized, anyway.
