iTunes photos don't organize into folders anymore when uploading them to PC

In the past I have plugged my iPhone into the computer to do backups and it would save all of my photos into folders organized by month and year. But for over a year now they have just been uploaded all together into the pictures tab on my PC individually and photos from February are mixed in next to August and May all in a confusing jumble. I have been manually going through them and creating new folders to organize them chronologically but it's getting frustrating. Was there some option I unknowingly chose for this to happen, and if so, how can I get my phone to sync its photos back into chronological folders?

To verify the correct steps are being taken, make sure you're following the guidance in this resource: Sync photos in iTunes on PC with devices


Making sure iTunes is up to date may help. If needed, here are those steps: Update to the latest version of iTunes for Windows 10

If you downloaded iTunes from the Microsoft Store
Versions of iTunes from the Microsoft Store update automatically when new versions are released.
You can also check for updates through the Microsoft Store.

If you downloaded iTunes from Apple's website
1. Open iTunes.
2. From the menu bar at the top of the iTunes window, choose Help > Check for Updates.
3. Follow the prompts to install the latest version.

If Check for Updates isn't an option in the Help menu, then you downloaded iTunes from the Microsoft Store.
