Is there a way to go back to the old alarm clock? I want to be able to just set an alarm for any time of day, any time I want. Reminders wouldn’t work because I need it to keep going off, not just a single beep.

The "old alarm clock" never went away. You have always been able to just set an alarm for any time of the day, any time you want.

Thank you for using Apple Support Communities. Currently, it's not possible to revert to an older iOS version to use the previous version of the Clock app. However, you can edit and change the notification sound for Reminders by following the steps below:
1.) Go to Settings > Reminders.
2.) Tap on Notifications > Sounds.
3.) From here, you can select the specific sound you wish to use.
