When I take a screenshot and press on the screenshot image the Full page options do not appear in order to save as a pdf. IOS Version 16.6.1. Should I be altering any settings for this function to appear?

Full page screenshots are not available for all apps (mainly just websites). You should update your phone to the latest version of iOS in Settings > General > Software Update. If you want to stay on iOS 16, the version is 16.7, if you want to upgrade to iOS 17, there will be an option for that as well.
