apple watch doesnt pair

I bought a new iPhone and everything was transferred to the new device, except the Apple Watch. I deleted the old phone and I can't pair the new phone to the Watch at all

The “If you don't have your old iPhone or you erased it“ section of the following support article can help with pairing your Apple Watch to a new iPhone after you’ve erased your old iPhone: How to pair your Apple Watch with a new iPhone - Apple Support

If you setup the new iPhone using a backup of the old iPhone, your new iPhone may have a backup of your Apple Watch stored. You’ll be prompted to set up the Apple Watch using a backup during setup if one exists.
