Managing AppleCare Plan Extension:

A. Buying AppleCare: Buy an AppleCare Plan - Apple Support

B. Extending AppleCare: Extend your AppleCare+ Coverage - Apple Support

Note that once it has expired, Apple may or may not allow for the AppelCare to be extended. How they make that call, is determined by Apple.

C. Updating AppleCare:

Apple Care cannot be "updated". If you want to upgrade it, you might be able to cancel what you purchased, and then purchase the correct one. Contact Apple Support for assistance with upgrading it:
