I'm awaiting delivery of my new 15 Pro Max. I'm with Spectrum Mobile and my iPhone 13 Pro Max has an actual SIM. So when my new phone arrives should I go to Spectrum before transferring data to get the eSIM set up or can I do it after I transfer the data?

Spectrum supports eSIM but doesn't appear to support migration on the fly. I suggest you do an iCloud backup for the old iPhone (just in case) before you do the setup, then just contact Spectrum to get their advice and guidance for the migration. They will know better than anyone what works best with minimum pain.
