OTA Update log? Never seen it before. Just curious as to what it is.

Don’t haze me for asking. Whoever the guy is who says “these aren’t for mere mortals” blah blah blah, go on and see yourself out. I’ve just never seen this log before and I want to know what “Over the air updates” are. Plus this one is oddly written in very plain English and I’ve definitely never seen THAT before.

Here, Over-The-Air Update: https://en.wikipedia.org/wiki/Over-the-air_update

Screenshots of logs and of telemetry can potentially include sensitive data.

Apple does not document the meanings of the logs and telemetry, and does include many ominous and scarily-worded and utterly-benign messages. Logs and telemetry are intended for app developers (for their own apps and their own messages) and for Apple.

There are probably better places to learn about the internals of and to discuss reverse-engineering iOS as well, but I’d start with acquiring Jonathan Levin’s (Moxii) three-volume *OS Internals book (user space, kernel internals, and security & insecurity), as those also apply to iOS, iPadOS, and macOS. The Evil Bit blog, too.
