How do i turn off the hide my email feature

Hide My Email is a Sign in with Apple feature and cannot be turned off. However, you don't have to use Hide My Email to use Sign in with Apple: How to use Sign in with Apple - Apple Support
You can view which apps and websites are using Hide My Email on your Mac by going to > System Settings > [Your Name] > iCloud > Hide My Email.
