I want to install Xcode on my iMac;

I want to use Xcode on my iMac; iMac 14,3.

I can't download Xcode because my os is too old; Catalina 10.15.7.

What are my options?

Download an older version. For example AFAIK:

Xcode 11.3.1 is the last that works on macOS 10.14.

Xcode_14.1_for_macOS_13.0.1

Xcode_15.0_for_macOS_14.0
