Thank you for reaching out in Apple Support Communities. There are two methods that's available to unpair the Apple Watch from the previously used iPhone. We recommend to try each of these methods and see if it's successful to have it unpair. Once that's done, you can then pair the Apple Watch to your new iPhone 15. First option worked. Super helpful Apple support did “screen share” and worked this through quickly with me. All good now! Thank you.

I can't pair my new Phone 15 with Apple Watch series 7. Old phone won't unpair, get error message not successful. Neither old nor new phone say they can connect with Apple Watch.
