I’ve had my iPhone XR since 2018, and the battery health has been at 85% for almost two years. Is this still accurate, because manuals say that the 85% should last another year at most. Or am I just lucky?

I guess it's possible, but unusual. Are you having any issues with the phone lasting throughout the day? If in doubt, schedule an appointment at your Apple Store Genius Bar and have Apple test the phone. Do let them know Battery Health has remained at 85% for the last two years.
I'd have your phone checked at your Apple Store. But at 85% health, that's likely not so bad in terms of charge. A new battery will cost $89, if Apple agrees to replace the battery. Do NOT let ANYONE other than Apple or an Apple Authorized Service Provider (like BestBuy is one in the US) replace your battery. Anyone else does NOT have access to authentic Apple parts.
Hmmm, that's kind of unusual. Have you ever had the battery replaced in your phone?
Usually if I wake up at 7 for example then my battery is below 10% by around 3pm.
