I purchased an Apple Watch with cellular feature last week in Australia. Brought it back to the US and tried to set it up but it says “Apple Watch does not support AT&T cellular in this region”. Has anyone overcome this issue or have I wasted a lot of money?

There are two versions of the cellular watch. One for North America and one for everywhere else. And the cellular carrier networks for them are incompatible. You can still use the watch as a GPS-only watch without activating the cellular feature. For more info, see:
