You could but it is a very poor idea on a 11 year old computer. Why not simply use an external SSD connected by USB 3. You can use the following for directions:

In addition to the link that rkaufmann87 referenced as a process you could also just clone your internal drive using an app like Carbon Copy Cloner. Works really well especially on Intel Macs.

The external SSD is an excellent solution. On my 2015 iMac read speed went up by a factor of 5; made the machine a pleasure to use: 90MBps to 480MBps typically.
Another vote for the external SSD. Apple did not design 2012 and latter iMacs to be opened by the user. Attempts to break the seal to open the case can cause irreparable damage to the squishy bits inside the case; the patient "dies on the table."
The service is risky enough that some Apple Authorized Service Providers will not attempt to open these models. The external solution is a safe, at-home DIY option with the best benefit-to-cost ratio.
The benefit of using an external SSD which was cloned from your internal drive with Carbon Copy Cloner is that when you move on up you can easily take it with you.
Also I recommend you start saving up for a new Mac as the 2013 models are no longer supported by Apple and have much slower technology than the current Macs.
