I had Family Sharing and children accounts for a couple of years now.
I just noticed I can use a custom email domain and set that up. During the process it says you can add new emails to it later (the domain has been parked and did not have any emails set up).
Now that I have it all set up I want to add custom emails for each of my children accounts.
HOW?????????? Holy difficult there is no obvious way to do it.

Great question! You can change your child's Apple ID account like any other Apple ID accounts out there. Here's how: Change your Apple ID - Apple Support
After you change your Apple ID email address or password, you might need to update your sign-in information with any Apple services you're using.

Thanks but as I understand your answer that doesn't tell me how to actually create the custom domain email address. If I just go to my kids account and add the email address I want to use it just send me the email as mine is a catch-all email.
Apple's process literally says if you have existing emails enter them now, you can add new ones later but then there is no obvious (at least not to me) way to add new emails for the custom domain.

I've been on chat with tech support for over an hour (2 different chats) and still no resolution and then I just got hung up on (said lost connection we're re-connecting you to someone and then later said contact us later--even though my computer maintained connection to internet).
