I am unable to send texts/calls to people other than those on Apple products. Also, my phone says SOS only. Not sure why, but it was working perfectly fine before.

We see you have a message on your iPhone and are unable to send text to everyone. Based on that SOS message, you'll want to follow the steps in this article: If you see No Service, Searching, or SOS on your iPhone or iPad
If you see SOS or "SOS only" in the status bar, your device isn't connected to a network, but you can still make emergency calls. This feature is available in Australia, Canada, and the United States.
Usually the steps in that article will resolve this issue and let you make calls or texts to all contacts again.

I can send text messages to those on Apple products, but otherwise it says SOS only. What do I need to do to reset this? Was working fine before…
