When I checked the AppleCare+ coverage and expiration date it shows that AppleCare+ will expire on Feb 2031.

Yes, I have never heard of an Apple Care+ plan that has a coverage that long either.
On my iPhone, the layout for the Apple Care+ plan for my Apple Watch 5 and iPhone itself looks different.
It does not show the field for the Serial and Agreement Number, but that may depend on the region for the iOS and the information that has to be shown.

Definitely too good to be true.
You should contact the official Apple Support about that and make sure your Apple Watch is covered correctly.
I contacted Apple customer service and I provided them with the serial number of the watch.
the customer service agent confirmed that it expires in 2031!!!
In that case, enjoy your Apple Watch 🙂
