I just transferred files from my Huawei phone on my new Sandisk Extreme 1 TB SSD. I can see the files correctly named in my MacBook Pro finder but can't open them as their format isn't supported. I tried reformatting the hard drive to the APFS format following a youtube video but that fails too, as it is "used by process 1638 diskimagesiod". What to do, what to do...?

What sort of files are these?
As the format is unsupported, I assume you have no application that is appropriate for opening them.
If your Mac can see the files, then there is no reason to reformat the drive. The problem isn't with the drive format, it would be with these particular files.
And what model and year is your Mac?

It's .pdf's, .jpeg, .mov, .doc...the usual.
My Macbook pro is 2017 with MacOs Monterey.
A tech I had a quick chat with suspects a problem in the file transfer as the ExFAT should not be a problem.
Files dragged to the disk from my Mac are opened without a problem.

So yeah, all those file types are of course within the realm of the expected for the Mac.
Methinks your tech advisor is correct to suspect the initial transfer of those files from the phone to the drive has somehow gone sideways.
