Can you with a check to Apple?

You can try to contact Goldman Sachs using a support number provided in the Wallet app for a one time payment. This sometimes occurs when a person no longer has a device to make the payment. They will not send you a monthly bill and continually paying by check will not be a solution. Apple does not have customer service for the Apple Card, as that is handled by Goldman Sachs. Apple provides the ability to pay on the Apple Card through the Wallet app, but that is all.
