I am working with fairly large CSV files, 25 mb, that I would like to merge into one Numbers file. The issue I'm facing is not being able to open multiple CSV files in one numbers sheet.
I have an M2 Pro on my computer but when I try to copy and past the whole table it locks up and is not able to handle that operation. Does anyone have any solutions for how I can work around this? simply copy and paste less?

If copy-pasting the data isn't working then you could try copy-pasting an entire sheet into the document where you are consolidating the data.
Click the sheet name (tab at the top), choose Copy Sheet from the dropdown, click a sheet name in the receiving document, and choose Paste Sheet from the dropdown.
With luck this will bring the entire sheet over together with its table that contains the data.
Keep in mind that Numbers isn't always the best tool for working with large sets of data. If those 25 mb files include thousands and thousands of rows with lots of columns, then you may encounter sluggish behavior.
