Buying a Gift card with Apple Pay

So I've tried to buy an E Apple Gift Card with my Apple Pay using my Desjardins debit card on multiple occasions with multiple different stores and it never worked. It says that I need to chose a different card, but I don't understand because Desjardins is in the list of compatible card with Apple Pay and I never had any problems until I tried to buy the Gift card. Does someone have an answer or an explanation? Thanks
