Why did my Memoji icons disappear from the favorites area of my emoji menu?
I was given about 8 of my Memojis in various positions (in the far right ’favorite’ emojis area), but now they are gone. I can see them all (& more) in my stickers, but they are no longer available in my emoji menu when composing a message.
What happened, & how do I get them back?
I have an iPhone 14 Pro using IOS 17.0.3 .

You correctly identified where Memoji stickers can be found and used in iOS 17, further described in Send stickers in Messages on iPhone:
"Decorate with stickers
on your iPhone.
, tap Stickers, then add stickers made from any of the following:

Each Memoji—even the ones you create—automatically generates a range of poses and expressions.The area you describe for recently used emojis covered in Have fun with emoji is not directly customizable and there appears no way to add Memoji to this section.

My biggest “Ah hah!” was when you referenced ‘stickers’: I thought of my Memoji only in terms of choosing the ‘Memoji’ & ‘emoji’ icons’ menus. When I chose ‘stickers’, there they all were. Problem solved!
