They should be listed. You can use EtreCheck to cross-reference from the developer name and find out exactly what apps these are. Apple doesn't always tell you.
Apple's "background app" user interface is just a really bad idea. You should never disable any apps using that interface. If you don't want some app to run, then you should uninstall it. Don't try to just disable part of it. There is no way to tell how apps will respond to that. They were never designed for that kind of vandalism. Maybe in 5 or 6 years, when developers notice that Ventura was released, they will adapt to this new capability. But for now, I wouldn't recommend making any changed in that new user interface.
