A few things to try:
If the printers (models?) have Ethernet in addition to Wi-Fi, you could also check whether there would be a difference if you wire a printer to one of the LAN ports of the router (instead of using a wireless printer connection). AirPrint works with wireless or wired network connections.

iOS 17 broke printing from ipad and iphone for my Brother MFC-L2700 (iOS 16 still worked). Upgrading the Brother firmware to the 11/9/2023 release resolved the issue.
Apple did not cause the problem. Apple released a new version of the operating system. You upgraded your devices. Now it's up to the Printer makers to supply updated drivers for their devices. That's how it works: Apple make the operating system, and provides the hardware makers and software makers with details and beta software in plenty of time to allow them to update their products. If they are not timely doing so, or simply don't bother, your argument is with them. This is one of the reasons some people delay upgrading their operating systems until they are sure their peripherals and key applications also work with the new version.
(Incidentally this is equally true of MicroSoft and Windows as well.)

Brother does not appear to offer drivers for anything higher than macOS 10.15 Catalina:

However, it has been reported that a Catalina driver may work with a newer operating system version in some cases. This may or may not work with your Mac, but you could perhaps try it. Look upon it as a pure experiment. As always, make sure that you have backup copies of all important files before testing anything. Working drivers would be especially important for a direct Mac-to-printer USB connection.
If the printer is connected to a Wi-Fi network (router), there may be another option. The Brother MFC-J475DW is listed in the November 13, 2023 (en-us) edition of About AirPrint - Apple Support. This should mean that it can be used without an additional driver, and that it is compatible with your Mac and macOS, provided that the printer and the computer are connected to the same network.
If there is a problem with AirPrint device discovery, you may want to try a full power-cycle sequence (including the router, in this order, with these waiting times):
Power off the Wi-Fi router, the printer, the Mac, the iPhone and the iPad, and all other devices/computers. Wait two to three minutes. Power on the router. Wait two to three minutes. Power on the printer. Wait a minute or two. Power on the Mac, the iPhone and the iPad. Finally, power on all other devices/computers.
iOS 17 update on our iPhones and iPads is not compatible with our HP printer or Brother printer. We have done all the suggestions given by Apple and none have been the solution. Since Apple caused this problem we strongly feel it is up to Apple to fix it. Why should we endure the expense and ferret out a printer that is compatible with your services?
You mentioned that you had tried all suggestions given by Apple. Did you also try everything in my above post?

It is not known to me whether the latest iOS 17.1 update contains anything related to printing.
Well, my Brother MFCj475dw I have stopped working with my MacBook. There are no updates with Brother. So…only answer from Brother was told “ just to buy another printer”. My printer with my phone and iPad works just fine still with not using IOS 17. Do you think I will update to IOS 17? I do not think so. I really do not want to spend money on something that is not broken. Very frustrating.
