PDF Text Disappeared

I updated my Macbook Pro to Sonoma 14.0 and have since not been able to read a PDF of my textbook for school! I have it downloaded and the pages are all present and the file seems fine, but when I open it the words are all missing. It's really strange because all of the pictures that correspond with the text are there, there just aren't any words! I'm having this issue both on the Preview app, as well as in the Mac version of Notability, where I have sections of the reading with notes for different weeks of my class. On my iPad, the textbook is completely intact on the files app and on Notability, which makes me think it has something to do with my computer & the Sonoma update? I've tried removing the download of the book but it says it's in use by another application, and I've tried restarting my computer with no solution. Any ideas??

I just tried and I can select the text, the lines are showing up. I can also search words that are present in the document and they are shown as being present in the article.

I've heard of Adobe Reader but I was just frustrated as preview has always worked for me! Even for this textbook, as recently as 2 days ago, preview was compatible with the file. It also doesn't really explain why the same issue would be happening on another platform (Notability)
