I recently activated the logs analytics and from what I can tell my maximum capacity is 97%, however if i go to settings> battery > batter health & charging. I see maximum capacity is 94%.

can someone explain this discrepancy

That value is approximate (and can differ 2-3%).
Since Maximum Capacity is measured in full charging cycles, knowing that iPhones support about 500 cycles before their battery health goes down to 80% (-20 from 100), which is the critical point of their life, reading your log (137 cycles) the deviation should be 5.48.
Then 100-5.48=94.52

Apple "rounding" is a bit mysterious as well.
You would think that 94.52 would be rounded to 95, but 94.52 will be displayed as 94. So, at any given time your battery will actually be a bit better than the display number.
