Since you're not experiencing the issue with other Android users, we suggest removing your spouse's contact and then add it again. Steps to delete contact is listed below and also available in this article: Manage and delete contacts on your iPhone or iPad.

When you delete a contact, it permanently deletes it from your device. If you delete a contact from your email account, you also permanently delete the contact from all devices signed into that email account.

To delete a contact:

1. Open Contacts and tap the contact that you want to delete.

2. Tap Edit.

3. Scroll Down and tap Delete Contact then tap Delete Contact again to confirm.

Siri also suggests new contacts based on your use of other apps, such as email you receive in Mail and invitations you receive in Calendar. (To turn this feature off, go to Settings  > Contacts > Siri & Search, then turn off Show Siri Suggestions for Contacts.)
