For the apps you are using, go with the MacStudio. The base MacStudio will perform better with he M2 Max chip with more GPU cores and the base model comes with 32GB RAM (the amount I recommend for those RAM hungry apps). Once you add RAM and bump to the higher performance M2 Pro on the MacMini Pro you will be at the cost of a Base MacStudio and not the same level of performance.
If you really need to squeeze the Mac in a tight space, then a Mini may be your choice but in terms of desktop space, the footprint of the MacStudio is not much larger than the Mini.
One other plus for the Studio is its incredible cooling system as many reviewers could not get the thing majorly toasty. The Mini Pro on the other hand is cramming much more performance in a much smaller package and heat could be an issue, especially loading with the apps you mention.
And finally, my own view on purchasing computer is to buy the highest performance you can afford.

If you perform very heavy editing tasks, the studio is better
The high end Mac Mini is almost as good as the Studio but look at some comparison reviews on YouTube. But the high end Mini costs about the same as the Studio.
