On an iPhone or iPad go to Settings > Wallet & Apple Pay > Shipping Address > Edit > tap minus sign to the left of the address that you want to remove.

Old Shipping address When ordering and choosing Apple Pay there is an address for shipping that I cannot get rid of . It defaults to an incorrect address with every order and if not manually removed orders will go to that address.
