I just bought a new iPhone and ready to add my Amex card to the wallet. But in the process, it only accepts 3 digit CVV (cannot enter more than 3) while the Amex card has 4. How should I fix this?

I tried, but it still only accepts 3 digit input. However, I tried the 3 digits number on the back of the Amex card and it worked. It seems that both 4 digit number on the front and 3 digit number on the back of the card can be used as CVV of the Amex card.

I've never had a problem adding my AMEX card and the 4-digit CVV. I wonder if perhaps you entered the card number incorrectly and the phone thinks it's a different kind of card. I'd suggest you restart the phone and try again.
Thank you :) Mine is a black one with Amex and Union Pay issued by SPD Bank (not a standard one in the US I guess). Is it the type of the card cause that the wallet to only allow me to enter 3 digit rather than 4? Or is it just a bug of the wallet?

Just out of curiosity, which AMEX card do you have? I have the standard green one.
I have no way of knowing that for certain but, yes, I suspect that it's the unusual version that is the issue.
