Trying to download iTunes but the error message is that I need to download a different version 10.3 but I'm on 14.3. Have they not updated?

I assume that the "versions" that you refer to are MacOS versions. If so, then as you are probably aware there is no iTunes in the latest versions of MacOS (it uses Finder instead).
However, iTunes has never had a the facility to copy music back from a device (such as an iPod), so no version of MacOS will help you.
