How do I stop tracks in a playlist from playing one after the other?
I'm creating a playlist of short clips of music for a quiz but when I play the first clip the next one automatically plays and so on.

Uncheck all the tracks in the playlist. iTunes/Music will not automatically advance to an unchecked track.
If you don't see the checkboxes, make sure the list is in Songs view and enable them at Music > Preferences ? General > "Show -- songs list checkboxes."
