You pay dearly for the light weight and portability of the MacBook Pro, and its fabulous built-in display. If you do not need that portability, or are thinking of bypassing the built-in display, you are wasting your money with the MacBook Pro solutions -- they are optimized for stuff you don't care about.
The question I try to ask is, "what are the shortcomings of the system you are using now, and will the new system satisfy those shortcomings?"
Computers will always be faster, better, and cheaper if you wait. But at some point, you just have to hold your nose and vote for the least objectionable one and go get your work done. That they will too soon replace it with a better one is completely unavoidable.

It is where you're going to use the Mac for .If you want a desktop the studio is your way to go, and if you want to process photos on the go and you're in need of a portable computer , you can go for the M3 MBP
Makes absolute sense. I'm thinking more on on cranking power. If the MBP M3 will make my life a little easier, I will that way. The only thing is I don't know which one is faster. Thanks for the input @wheelienick!
Sooo true! Thank you for the insight. I need to take an inventory of my personal applications to decide. Thank you, Grant!
